Mole Day

The story

Mole is Mexico's great sauce tradition: complex blends of chiles, spices, nuts or seeds, and sometimes chocolate, ground and simmered into velvet that cloaks turkey, chicken, or enchiladas. Mole poblano is the dark, celebrated ambassador, while Oaxaca's many moles—negro, rojo, coloradito, verde, and more—prove the word names a family, not a single recipe. Making mole is an all-day act of toasting, grinding, and tasting until balance appears.

Puebla marks a state mole day on October 7, and national proposals have sought the same date, reflecting how deeply the sauce sits in cultural pride. Mole belongs to weddings, patron-saint feasts, and careful home Sundays when the cazuela takes over the stove. Each batch carries the cook's hand; no two pots taste identical, which is part of the charm.

On Mole Day, simmer a pot—or support a cook who does—and serve it with rice, sesame, and warm tortillas. Invite people to share the labor if you start from dried chiles. Celebrate mole as Mexican patience turned into sauce.
