The story

Ramen, a Japanese comfort dish celebrated for its versatility, transcends the image of a simple pre-cooked block with a flavor packet. With its foundation of wheat noodles, broth, tare seasoning, and optional toppings, ramen offers limitless possibilities. Tracing back to 400 CE, Chinese immigrants introduced Japan to lamian, wheat noodles made with alkaline mineral water, impacting texture and color. Similar to ceviche's protein denaturation with acids, alkalinity plays a crucial role in ramen's culinary evolution. In the early 20th century, Rai Rai Ken popularized ramen in Tokyo, serving wheat noodles in a salty broth. As Japan industrialized, ramen became a go-to for the urban working class, offering an affordable and filling meal. Post-World War II Allied occupation brought ramen to the black market due to food shortages. Illegal vendors, often linked to the Yakuza, played a vital role in providing ramen during this challenging period. In 1958, Momofuku Ando revolutionized ramen, creating an instant, shelf-stable meal through flash-frying and chicken flavoring. This innovation, while not the first, made affordable instant ramen a global phenomenon. The late 20th century witnessed ramen's global popularity, with diverse adaptations in various countries. In the 2000s, ramen gained recognition in Michelin-starred restaurants, solidifying its status as a gourmet delight.
