The story

Aperitivo is Italy's cherished early-evening ritual: a bitter-sweet drink and a few savory bites that open the appetite before dinner. In Venice and across the north, the Spritz—bitter orange aperitif, sparkling wine, and a splash of soda over ice—has become the glass of the hour, glowing amber in sidewalk cafés. The custom grew from café culture and the Italian belief that hunger should be awakened gently. Bars set out bowls of snacks; guests linger standing or perched on stools. On Italian Aperitivo Day, mix a Spritz with bitter aperitif, prosecco, and soda, garnish with an olive or orange slice, and set out a few bites—nuts, cheese, focaccia.
