Polenta Day

The story

Polenta is northern Italy's comforting cornmeal porridge, simmered slowly until thick enough to mound on a board or soft enough to spoon from a bowl. Once a staple of mountain and plain, it partners with melted cheeses, mushrooms, sausages, or a ladle of ragù. Cooled and sliced, it can be grilled or fried into golden slabs. The flavor is mild and toasty, a blank canvas that carries richer toppings without complaint, and the act of stirring a pot of polenta still feels like gathering weather against the cold.

Yellow or white cornmeal, coarse or fine, changes texture and tradition by region. In the Veneto, Friuli, and Lombardy, polenta remains a weeknight hero and a feast-day side. On Polenta Day, whisk meal into salted boiling water or broth, stir patiently until creamy, and finish with butter and cheese.

Top with sautéed mushrooms, sausage, or simply more butter and sage. Celebrating polenta is celebrating northern Italy's warmest answer to hunger—humble grain transformed by time and a wooden spoon.
