The story

Hamsi, the Black Sea anchovy, is more than seafood in northern Türkiye—it is a seasonal identity, celebrated when winter shoals arrive and kitchens fill with the smell of frying fish. Fragile silver fish are cleaned, floured or left simply salted, then fried until crisp, grilled in leaves, baked into rice pilafs, or layered into savory breads. A squeeze of lemon is almost mandatory. For Black Sea communities, the Hamsi run marks abundance, cold-weather gatherings, and a fierce local pride that rivals any land-based harvest.

Fishing families and coastal towns built songs, jokes, and recipes around the little fish, treating it as both everyday protein and festive centerpiece.
