The story

National Caviar Day, celebrated annually, pays homage to the luxurious delicacy of caviar and its fascinating history. Traditionally, the term “caviar” referred to roe from wild sturgeon in the Caspian and Black Seas, encompassing varieties like Sevruga, Ossetra, Sterlet, and Beluga. However, its definition has expanded to include roe from various fish species like trout, salmon, and whitefish, with colors ranging from black to red and orange. Caviar is renowned for its rich vitamin B12 content but is high in cholesterol. True caviar, particularly the non-pasteurized variety, is highly perishable and requires refrigeration, while pasteurized caviar has a longer shelf life. Iran and Russia stand as the world's largest caviar producers, yet countries like the United States, Canada, Italy, Spain, and Saudi Arabia also significantly contribute. Caviar's history dates back to ancient times, where sturgeon was valued for both its meat and eggs. Overharvesting in the early 1900s led to sturgeon fishing bans, elevating caviar to a luxury item. National Caviar Day commemorates this delicacy's evolution from Byzantine Greeks to the Russian aristocracy, marking its popularity boom during the Roaring Twenties in Paris. The decline in sturgeon populations prompted international bans on Caspian Sea sturgeon fishing in 2008, emphasizing conservation needs. Sturgeon farms emerged in the 1990s, aiming for sustainable caviar production. Today, caviar has become more accessible, thanks to sustainable practices and humane egg-harvesting methods, allowing it to be enjoyed by a broader audience, no longer confined to the elite.
