The story

Even deep research doesn’t pinpoint the exact origin of National Coconut Cream Pie Day, but the pie itself has been around for well over a century. In the 19th century, as importing and exporting perishable goods improved, Americans and Europeans fell in love with tropical fruits like bananas and pineapples. Coconuts, however, were tricky, they spoiled easily on long journeys and puzzled cooks who didn’t know how to use them.

The breakthrough came when a French export company in what is now Sri Lanka began shredding and drying coconut meat, making it shelf-stable and accessible. By 1895, a Philadelphia miller received a shipment of coconuts as payment from a Cuban client.

He developed a process for drying and distributing coconut, sparking its rise in American kitchens. Soon, coconut recipes flooded cookbooks, including pies.

While cream pies have European roots, Coconut Cream Pie may be an American creation. By the early 1900s, shredded coconut had become widely available, and recipes for coconut cream pie started appearing in cookbooks. Its creamy filling, airy meringue, and flaky crust perfectly complemented the tropical coconut flavor.
