Arancini Day

The story

Arancini are Sicily's golden fried rice balls, stuffed with ragù, mozzarella, peas, or other fillings, then coated in breadcrumbs and cooked until shatteringly crisp outside and creamy within. The name nods to little oranges, the shape and color of the classic sphere; in eastern Sicily, similar treats may be conical and called arancine. Leftover risotto finds glorious second life inside the crust, though many cooks prepare rice especially for the purpose. Street stalls and rosticcerie sell them hot, a portable feast that tastes of celebration and everyday hunger alike.

The snack carries Sicilian pride and friendly north-south naming debates that never spoil the appetite. Fillings vary by town and season—spinach, pistachio, butter and ham—yet the joy is always contrast: crunch against molten cheese or savory meat. On Arancini Day, shape cooled rice around a spoonful of filling, bread and fry carefully, and drain on paper before serving. Share a platter with a simple tomato sauce for dipping.
