The story

Julienne fries, also called shoestring fries, are thin-cut French fries that have become a fast-food favorite. The term julienne refers to slicing vegetables into long, thin strips, usually 1/8 inch wide and 1–2 inches long. This technique, also called frenching, is where the term French fry comes from.

While the origins of French fries are debated, most believe they were created in Belgium in the late 1600s when villagers near the Meuse River fried potatoes as a substitute for fish during winter. However, France also claims the dish, with Antoine-Augustin Parmentier promoting potatoes in the 1700s after his captivity in Prussia. By the late 18th century, frites were sold by Parisian street vendors.

French fries reached America through Thomas Jefferson, who served them in the White House in 1802. By the 20th century, American fast-food chains spread them worldwide. Fries have countless variations, curly, crinkle, waffle, and are paired with ketchup, mayo, or vinegar, depending on the country.
