The story

The Schwarzwälder Kirschtorte, or Black Forest Cake features layers of chocolate sponge cake, fluffy whipped cream, tart cherries, and a splash of cherry brandy, creating a flavor combination loved worldwide.

The origins of the cake trace back to the Black Forest region in the 16th century, where sour cherries and Kirschwasser (cherry brandy) were popular. Chocolate soon made its way into desserts, creating the perfect pairing for the local cherry-based treats.

Some credit pastry chef Josef Keller with creating the cake in 1915 at Café Arend in Bad Godesberg, though its true origin remains debated. By the 1930s, it was a sensation in Berlin, and its popularity spread globally.

Authentic Black Forest Cake, in Germany and Austria, must include Kirschwasser, a cherry brandy. Without it, it doesn’t bear the prestigious “Black Forest” name. Traditional versions layer moist chocolate sponge, whipped cream, cherries, and cherry brandy, topped with more cream, chocolate shavings, and maraschino cherries.

American versions often skip the alcohol, focusing on the chocolate and cherry flavors. Sweden offers a twist with Schwarzwaldtårta, using chocolate meringue instead of cherries.

In Germany, it’s a staple at weddings and special occasions.
