The story

Cheddar’s journey began in the 12th century, where a milkmaid accidentally left a pail of milk in a cave. The cool, humid conditions worked their magic, and cheddar cheese was born!

Whether or not this tale is true, cheddar quickly gained royal favor. King Henry II loved it so much that he ordered over 10,000 pounds in 1107. His son, Prince John, ensured it remained a feast staple.

By the 18th century, English settlers brought their cheese-making skills to America. In 1851, the world’s first cheese factory opened in New York, revolutionizing cheddar production. No longer just for castles, it became a household favorite across continents.

What makes cheddar, well, cheddar? It’s all about the cheddaring process—curds are stacked, pressed, and turned, creating that signature crumbly texture. The longer it ages, the sharper and nuttier it gets. From Vermont’s creamy varieties to the bold cheddars of the West Coast, its flavors range from smooth to caramel-like with a satisfying crunch.

In 2019, Tillamook County Creamery Association founded National Cheddar Day, celebrating its 110th birthday and cheddar’s legacy. With free samples and giveaways, the festivities proved one thing—America’s love for cheddar is undeniable. Today, cheddar makes up over a third of U.S. cheese sales, securing its place as a timeless favorite.
