The story

Brownies, as we know them today, began their journey in the late 19th century. One of the most famous stories traces their origins back to 1893, when Bertha Palmer, a socialite with a knack for entertaining, asked the Palmer House Hotel’s chef to create a portable dessert for the ladies at the Chicago World’s Columbian Exposition. The result? A dense, chocolatey delight we now call the Palmer House brownie.

By 1896, the term “brownie” appeared in Fannie Farmer’s Boston Cooking-School Cookbook, but it wasn’t until the early 1900s that the modern brownie recipe—gooey, fudgy, and utterly indulgent—took shape.

While brownies were carving their niche, cream cheese was also making culinary waves. The creamy concoction, first recorded in Europe as early as the 1500s, became a household staple in America thanks to William A. Lawrence of Chester, New York. In 1873, Lawrence began mass-producing cream cheese, eventually giving rise to the iconic Philadelphia brand.

The union of brownies and cream cheese is a culinary love story for the ages. By the 1920s, bakers began experimenting with this combination, swirling creamy, tangy cheese into rich, chocolate batter. The result?
