The story

Peach Melba, a blend of peaches, vanilla ice cream, and raspberry sauce, was created in the late 19th century by famed French chef Auguste Escoffier. The muse? Australian soprano Nellie Melba, whose voice dazzled audiences worldwide. The story begins in 1892 when Melba performed Wagner’s Lohengrin at London’s Covent Garden. Inspired by the opera’s swan boat, Escoffier crafted a dessert as elegant as her performance. At a dinner hosted by the Duke of Orléans, he unveiled Pêche au cygne—fresh peaches atop vanilla ice cream, served on an ice swan sculpture. By 1900, as head chef at the Ritz Carlton in London, Escoffier simplified the dish, replacing the swan with a drizzle of raspberry purée. Renamed Pêche Melba (Peach Melba), the dessert became an instant classic. Nellie Melba, born Helen Porter Mitchell, took her stage name from her hometown, Melbourne. Known for her refined palate, she inspired Escoffier to create not just Peach Melba but also Melba toast, crafted for her low-calorie diet. Peach Melba remains a favorite today, featuring poached peaches, creamy vanilla ice cream, and vibrant raspberry sauce. While modern twists swap peaches for pears or experiment with sauces, purists argue nothing beats the original trio.
