Caponata Day

The story

Caponata is Sicily's sweet-and-sour eggplant stew, a relish of fried eggplant, celery, tomatoes, olives, capers, and a vinegar-sugar agrodolce that wakes every bite. Served warm or at room temperature, it works as antipasto with bread, a side for fish, or a light lunch on its own. Every family guards ratios of sweet to sour; some add pine nuts or raisins, others keep it sharper. The dish tastes better after a night in the fridge, when the flavors settle into harmony.

Born from a landscape of eggplant gardens and pantry ingenuity, caponata shows how Sicilian cooking balances abundance and thrift. Vegetables are fried, then folded into a sauce that preserves them with acidity. On Caponata Day, fry eggplant in batches, simmer the vegetable base with vinegar and a touch of sugar, and rest the finished dish before serving.

Spoon it onto toasted bread, alongside grilled fish, or straight from the bowl. Celebrating caponata is celebrating Sicily's talent for turning humble vegetables into something bright, complex, and unforgettable.
