This French delicacy, also known as burnt cream, Crema Catalana, or Trinity cream, presents an enchanting blend of creamy custard and a tantalizing layer of caramelized sugar. The history of crème brûlée is shrouded in culinary mystery. Its roots trace back to the 17th century when a college student at Trinity College in Cambridge, England, allegedly introduced the kitchen staff to a novel dessert: a creamy, unsweetened custard with a caramelized sugar topping. Initially overlooked, this dessert, later named “Trinity Burnt Cream,” gained popularity, especially after the student became a fellow, earning recognition and acceptance from the kitchen staff. Trinity College still features its version of this sumptuous treat on its menu, complete with an iron bearing the college crest to create the iconic burnt topping. Meanwhile, Spain presents its own contender for the origin of crème brûlée – Crema Catalana, which is served on Saint Joseph's Day, March 19th. The Spanish argue that their version predates the French dessert, but it differs in that it is not baked in a water bath (bain-marie) as crème brûlée is. The French version of this delectable dessert, known for its baked-in-a-water-bath technique, gained popularity in the 19th century. Crème brûlée is typically served chilled after being sprinkled with sugar and caramelized using a kitchen blowtorch. This culinary evolution has made it an iconic French dessert, beloved worldwide.
