In Peru, rotisserie chicken, known as ”pollo a la brasa,“ is a national dish introduced by Swiss immigrants in the mid-20th century. It features chicken spit-roasted over charcoal, served with French fries, ”aji“ salsa, and mayonnaise-based sauces. Rotisserie chicken-centric restaurants constitute 40% of Peru's fast food landscape, with the average Peruvian enjoying this dish three times a month. National Rotisserie Chicken Day, initiated by Boston Market in 2015, celebrates this culinary delight.
