National Wagyu Day

The story

National Wagyu Day was created on June 21, 2022, by steak lover Steve Haddadin. This day highlights the strict authentication process behind real Japanese Wagyu, something even many chefs don’t know. To confirm authenticity, restaurants and buyers must request an official certificate, adding another layer of appreciation to the experience.

The history of Wagyu, meaning “Japanese cow,” goes back to 1868 during the Meiji Restoration when eating beef became popular in Japan. Wagyu cattle were originally work animals, but over time, they became known for their high-quality meat. In 1976, four Wagyu bulls were brought to the U.S., leading to the development of different breeds, including black, brown, shorthorn, and polled, through crossbreeding.

To make sure Wagyu stayed high quality, Japan introduced the Japanese Meat Grading System in 1988. Then, in 1997, Wagyu cattle were declared a "national treasure," and Japan banned their export, making authentic Japanese Wagyu exclusive to the country.

But today, with looser rules, certified Wagyu is shipped worldwide, while American Wagyu which is a crossbreed offers a similar taste outside Japan.
