The story

International Falafel Day, celebrated on June 12, honors the crisp, herb-flecked fritters that have become ambassadors of Middle Eastern and Mediterranean street food. Made from ground chickpeas or fava beans mixed with parsley, cilantro, onion, garlic, and warm spices, falafel is fried until the outside shatters and the inside stays moist and fragrant.

In Egypt, ta‘amiya often uses fava beans; elsewhere, chickpeas dominate.
