Parmigiano Reggiano Day

The story

Parmigiano Reggiano is the great aged cheese of Emilia-Romagna, a hard, crumbly wheel whose nutty, savory flavor seasons Italian cooking from north to south. Made from cow's milk in a strictly defined zone around Parma, Reggio Emilia, Modena, and parts of Bologna and Mantua, each wheel is salted, stamped, and aged for months or years until the paste becomes granular and full of tiny tyrosine crystals. A true wedge smells of hay, broth, and toasted nuts; grated over pasta or broken into shards, it finishes a meal with quiet authority.

The cheese is protected by a consortium and by PDO status, so the name itself signals origin and craft. Families keep a wedge in the kitchen for grating, snacking, and scraping the rind into soups. On Parmigiano Reggiano Day, buy a well-aged piece from a trusted cheese counter, taste it plain before cooking with it, and share a board of shards with fruit, honey, or balsamic.

Grate it over fresh pasta, stir it into risotto, or simply savor it with bread and wine. Celebrating Parmigiano is celebrating patience—milk, time, and the skilled hands that turn both into something unforgettable.
