The story

National Brownie Day traces its roots to 1893 at the Palmer House Hotel in Chicago, where socialite Bertha Palmer requested a small, cake-like dessert for boxed lunches at the Chicago World’s Columbian Exposition. The resulting Palmer House Brownie, adorned with walnuts and apricot glaze, became the iconic origin of the brownie, even though the name emerged later. As the 20th century began, the brownie underwent transformations, with the 1907 “Bangor Brownie” adaptation featuring extra richness with an additional egg and chocolate square. The term “Bangor” tied back to a Maine town where a housewife was believed to have created the original brownie recipe, solidifying the brownie's identity amid myths of its accidental creation. Before chocolate brownies gained fame, the blondie, featured in Fanny Farmer's 1869 cookbook, graced American tables with its light brown color and molasses flavor. Over time, brown sugar replaced molasses, introducing a butterscotch note. Blondies evolved with various chefs and cultural influences, offering a myriad of delicious variations. National Brownie Day is intertwined with historical significance, celebrating the 1893 exposition's 400th anniversary of Columbus' arrival and symbolizing Chicago's recovery from the Great Fire of 1871.
