National Kouign Amann Day

The story

National Kouign Amann Day, established by b. patisserie in San Francisco, California, celebrates the rich history of culinary traditions, highlighting the influence of global cuisines on American food culture. Founded by Belinda Leong and Michel Suas, b.

patisserie initiated this day to popularize kouign amann across the nation and contribute to the community by donating 10% of proceeds to Family House, a charity supporting children with cancer. Originating in Douarnenez, Brittany, in 1860, kouign amann, meaning “butter cake” in Breton, is a delectable pastry created serendipitously by baker Yves-René Scordia. The traditional cake features yeast-leavened dough with layers of butter and sugar, resulting in a layered pastry with a crispy, sugary exterior and a moist, soft interior.

Despite controversies about its origins, kouign amann has become an emblem of Breton gastronomy. The Kouign Amann Association, formed by bakers from Douarnenez, preserves its authenticity with strict guidelines. The pastry gained international fame after appearing on BBC's “The Great British Bake Off” in 2014.

Renowned bakeries in the U.S., such as b.

Patisserie and Dominique Ansel Bakery, serve this beloved treat. Its popularity extends beyond French borders, making it a must-try delicacy during visits to Brittany, where it pairs perfectly with chouchen or apple slices, enhancing the experience of its soft interior and caramelized, crunchy exterior.
