The story

By the 19th century, carrot-based treats took shape. In 1827, a French cookbook featured Gâteau de Carottes, while the Swiss embraced their own version, making it a children’s birthday staple. Across the Atlantic, Americans were just warming up to this spiced delight, with early recipes appearing by 1912.
Carrot cake’s big break came during World War II. With sugar rationed, the British Ministry of Food encouraged carrot desserts to keep morale (and sweet tooths) satisfied. The result? Carrot cake became a household favorite, cementing its place in baking history.
But what’s cake without frosting? The now-iconic cream cheese frosting didn’t arrive until the mid-20th century, thanks to the Philadelphia Cream Cheese Company. By the 1970s, Americans were convinced carrot cake was practically a health food, after all, it had vegetables, right?
