The story

Nougat’s origin traces back to 10th-century Middle Eastern manuscripts, while others claim it was enjoyed in ancient Rome as early as the 1st century. One romantic tale even credits a chef who created nougat on the spot for a wedding feast.

From the Middle East, nougat spread to Europe, where it evolved into regional variations like torrone in Italy, turrón in Spain, and German Viennese nougat. By the 17th century, it became a French favorite, earning its name from the Old Provençal word nogat, meaning "nut cake."

Nougat comes in many forms, each with its own twist. French nougat features a base of egg whites, honey, and nuts, while Italian torrone often includes citrus or vanilla flavors. In Spain, turrón can be soft with ground almonds or hard with whole nuts, and German nougat skips the egg whites altogether, favoring sugar, almonds, and chocolate. Even Persian gaz swaps honey for plant sap, creating a vegan-friendly version.

In Africa, nougat gets a fruity makeover, skipping nuts for dried fruits. And let’s not forget the modern nougat found in candy bars like Snickers, Milky Way, and 3 Musketeers, though these versions often lean more on corn syrup than tradition.

Historically, nougat was a luxury reserved for weddings, Christmas, and Easter. During World War II, it even made its way into soldiers’ rations for a sweet morale boost. Nowadays, it’s a staple at European seaside fairs and holiday markets, often dyed pink and white for festive flair.
